Cut the chicken and wash it.
We clean the vegetables, wash them and cut them into cubes.
In a 4 l saucepan, heat the oil and place the meat, stirring until slightly browned. Add onion, carrot, celery, parsnip and mix until it becomes glassy onion.
Put 2 cups of hot water over the meat to cover it, let it simmer for about 30 minutes.
In the meantime we make a thickening of flour and milk.
We cut the celery and parsley leaves.
Put the thickener over the meat, salt and pepper to taste and mix. Let it boil for about 15 minutes, stirring constantly.
At the end, sprinkle the celery and parsley leaves.
Serve hot with polenta.
