Accustomed to Moldovan saints since childhood, I learned relatively late about the Wallachian ones. More precisely, a former colleague, originally from Dobrogea, told me about them and brought me some, at a time when they were not in our stores. I prepared them then, more like noodles in syrup and I was not left with a special impression.
This year I decided to try the recipe of the Wallachian martyrs again, especially since they are now for sale in our country and in the meantime I was able to consult several recipes. My husband, who came from Transylvania and was also accustomed to our martyrs, asked me briefly, when I offered him a bowl of Wallachian martyrs: "What is this ...?" I told him that these martyrs who stylize the human body are the symbolic expression of the 40 Christian soldiers who were condemned to die frozen in Lake Sevastia because they refused to worship idols. This explains the fact that they are boiled, that they are served with the syrup in which they were boiled ...
It would be quite difficult to make these martyrs at home, although it would be, at the same time, a welcome solution, because the martyrs in the trade are made of durum wheat, difficult to boil correctly, so that it does not crumble. But with attention and patience we can make a few bowls of martyrs boiled in flavored syrup and thus celebrate this special day of the 40 Martyrs of Sevastia.


Why do we make martyrs for March 9?

The martyrs are celebrated on the occasion of March 9, the day on which the Orthodox Church celebrates the 40 Holy Martyrs. They, Christian soldiers who were part of the 12th Lightning Legion of Armenia, were sentenced to death by freezing in Lake Sevastia after refusing to worship idols.

On March 9, in the popular belief, the tombs and the gates of Heaven are opened. The 8th form of the martyrs represents a stylization of the human form. Given the fact that the recipe is a religious one, it is recommended to take the martyrs to church for sanctification, before consuming them.

In Moldova, martyrs are baked from an extremely cozonac-like dough and then smeared with honey and walnuts. Here is the best recipe for fasting Moldovan martyrs.

As simple as they are tasty and fragrant.

The dough is that of fasting house noodles, to which salt is added.

Ingredient:

100 g premix for pastry

90 ml of slightly warm water, to feel it on your finger a little above body temperature (at a practical 40 degrees)

1 tablespoon olive or rapeseed oil

Another 50-70 g pastry premix for kneading the dough

For cooking: fructose, cinnamon, lemon and / or orange peel, rum, larger ground walnuts.

Mix the flour with a pinch of salt, then with the oil, with your fingers, then add the water little by little.

Knead on the table then add the rest of the flour until the dough no longer swallows the flour (you will see that it is elastic and no longer sticks to the table). Let it rest for 30-40 minutes covered with a glass bowl - until the bowl steams.

Divide the dough into 3-4 smaller pieces, spread thin sheets like tagliatelle (about 2-3 mm thick), powder the sheet well with premix then cut martyrs with a special utensil.

Bake them in the oven for 30-40 minutes at 140 degrees Celsius (some of them may have a slight golden color. But do not bake too hard).

Bring water to a boil with fructose, rum and lemon / orange peel to taste, when it boils add the martyrs. Boil for 30 minutes (check every 20 minutes if they are cooked, keep them on the fire according to taste, I personally like al dente). The baking time and then boiling in water depends on the thickness of the martyrs.

When ready, turn off the heat and add the ground walnuts, cinnamon, fructose if you feel the need - let the walnuts soften a little for another 5-10 minutes.

How I measure water: I put 3 times the volume of martyrs, measured with the same bowl.


Traditions of martyrs

The 40 martyrs, from whom the name of the holiday is derived, were 40 Romanian soldiers killed because of their Christian faith. Also, this holiday is considered the beginning of the agricultural year, which is why tradition requires men to drink 40 glasses of wine, which will be a source of strength for field work. We do not recommend overdoing it with such a large amount, but a glass of red wine is really healthy, especially if it is homemade wine, without additives and dyes.

Depending on the area you come from, either Muntenian martyrs are prepared, such as the ones I grew up with, or Moldavian martyrs, made of cozonac dough, baked in the shape of the number 8, with walnuts sprinkled on top of a layer of honey. Martyrs are a delicious dessert, but even in their case it is not good to exaggerate, especially if you suffer from diabetes, obesity or cardiovascular disease. Consume martyrs in the first part of the day, so that all the caloric intake and the amount of sugars are consumed by the body until dusk.
