INGREDIENTS (for 2 servings)

  • 100-120 g pasta (macaroni, feathers) - I used whole feathers because that's what I had in the house
  • 30 g butter
  • 30 g flour
  • 1 cup milk
  • 1 cup white or rose wine
  • 1 cup grated cheese (important to be melting cheese, like mozzarella, cheddar, etc.)
  • 1/2 cup panko or breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon paprika
  • nutmeg
  • salt pepper

Bring salt water to a boil for pasta. They boil for about a minute less than written on the box because they will be cooked in the oven.

Separately, make a buttermilk with flour, stirring constantly. When the flour is cooked (about 2 minutes), gradually add the milk and wine, until a semi-thick sauce is obtained. Add the grated cheese and leave it on the fire for about a minute, until it melts. Season with salt, pepper and grated nutmeg (about a quarter teaspoon).

Mix the pasta with the sauce and place in the heat-resistant dish (s).

Mix the plain breadcrumbs or panko breadcrumbs (I used panko, because I had left over from the Christmas table) with the grated Parmesan cheese and the paprika and sprinkle over the macaroni and cheese.

Place in the preheated oven at 200 o C for about 15 minutes, until the golden crust is crispy.

I hadn't eaten anything like this in a long time. I was craving a recipe seen on TV. A classic kind, & # 8222mac and cheese & # 8221 as the Americans say. They are delicious and you can put all kinds of cheese in them, from cheese to sheep, cow, permezan and practically any kind of cheese! You can also combine the cheeses.

Crazy for those who love all cheeses. Being more conservative, I limit myself to cheese and maximum Parmesan cheese: D. Maybe it's a piece of gorgonzola, but just a piece.


  • 275 g of cheese (I used cheese and about 50 g of Parmesan)
  • 40 g pesmet
  • 280 g macaroni
  • 700 ml of skim milk
  • 50 g butter
  • 45 g white flour
  • a teaspoon full of mustard
  • tomatoes (optional)

Prepare the ingredients first, grate the cheeses, and mix 50 grams (these 50 grams can include several types of cheese) with the breadcrumbs. Grease a heat-resistant dish with butter, about 30x 20 cm and 5-6 cm high. If using tomatoes, cut them into round, medium-thick slices.

Boil water with a little salt, and boil the macaroni according to the instructions on the package. When they are ready, put them under a stream of hot water, to separate them, and let them drain.

Meanwhile, in a pot large enough to fit the macaroni later, melt the 50 grams of butter. In another pot heat the milk, it does not have to boil just to be warm well. When the butter is melted, put flour on it and mix for about 1 minute. Get off the fire! Pour over a third of the warm milk, mix well & # 8211 will thicken at this stage then pour another third, and mix well again, even if it makes lumps mix until they start to dissolve. Pour the remaining milk and mix everything. Put back on medium heat and stir continuously until the mixture becomes thick and silky. Reduce heat and simmer for 4 minutes. Stir occasionally.

Remove from the heat, and add a teaspoon of mustard and cheese. Mix well. If the composition is too thick, add more milk, between one and 5 tablespoons, until you think it has a good consistency. Don't be too liquid anyway, do not exceed 5 tablespoons of milk. Season with salt and pepper.

Add the macaroni to the pot with the sauce, and mix well, so that they are perfectly covered. It can be seen in the pictures below how it looks. There must be enough sauce to cover the pasta enough. The macaroni mixed with the sauce is poured into the bowl greased with butter, leveled and sprinkled on top of the breadcrumbs mixed with cheese. Put the tomato slices from place to place (I was more bitter, I didn't have tomatoes, so I did without: D).

The oven should be heated to 190 degrees. Put it on the middle shelf for 15 minutes. Then, leave only the grill (the top element of the oven) on and put it on the top shelf in the oven, 3-5 minutes, to brown the breadcrumbs well. Remove, leave for 3-5 minutes, and serve hot.

When they are hot they still flow and are delicious. When they cool, they harden, they can be cut into slices, and they are still delicious! Great appetite!

When the mixture has thickened, pour in the milk, salt and pepper and simmer, stirring, until you get a creamy sauce. Put the drained pasta and mix.

From now on you have two options: either serve as such, or put everything in a pan greased with butter, add extra cheese on top and bake for another 20-25 minutes. We recommend the second option.

If we want at this stage we can stop and serve the macaroni as they are next to a lettuce salad or we can go further, as I chose.

We take a muffin tray, grease it and with a spoon we take pasta and fill each place in the tray. Sprinkle Parmesan cheese a little on top of them, then add the breadcrumbs and sprinkle the cheese, this time gruyere. Put in the preheated oven at high temperature (425 f or 220 c) and bake for 10-12 minutes or until it has a golden crust on top.
