TerroreSplendore recipes

Hello everyone, in this period my garden delights me with many courgettes that I cook in a thousand ways, today I propose them in a skewer version.
Just get a courgette with a minimum diameter of 4 cm, cut it with a potato peeler or a mandolin into thin slices, stuff it with cooked ham and scamorza cheese, roll it in flavored breadcrumbs. An infinite goodness, my boys brushed them all in an instant.
Let's see below how to prepare them

Ingredients for 5 skewers with 4 courgette rolls

  1. I chop the parsley and basil, put them in breadcrumbs with a finely chopped clove of garlic, add salt and pepper and mix well
  2. I wash the courgette, remove the ends and cut it into thin slices with a potato peeler or a mandolin. I cut the cooked ham into wide strips like courgette, cut the scamorza cheese into cubes
  3. slowly the courgette slice on the cutting board, I put the cooked ham along its entire length, the smoked cheese in one end and roll it all up. While the smaller slices overlap them, stuffing them in the same way and rolling them up
  4. I roll the prepared rolls in flavored breadcrumbs, then I stick them on a skewer, I put 4 on each skewer. If you want, you can arrange them in a baking dish, without sticking them on the skewer
  5. slowly the skewers made on a baking sheet lined with parchment paper, I distribute the leftover breadcrumbs, put a pinch of salt, pepper to taste and a drizzle
  6. I bake in the preheated static oven at 180 & # 176 for 15 minutes, on the central shelf of the oven, Bon appetit!

below the video recipe

Wash the courgette and remove the two ends. Then, with the help of a mandolin or a potato peeler, cut it into very fine slices.

Separately, in a bowl, season the breadcrumbs with half a clove of crushed garlic, a sprig of chopped parsley, 1 tablespoon of grated Parmesan and salt. For the Thermomix version CLICK HERE

Now, arrange the courgette slices on a table. Salt them lightly and stuff each piece with cooked ham, provolina and about a teaspoon of seasoned breadcrumbs.

Turn each courgette, on itself, forming a roll. Put all the courgette rolls on a wooden stick, obtaining skewers.

Arrange the baked Zucchini rolls on a baking tray and sprinkle the surface with a sprinkling of breadcrumbs and a drizzle of olive oil. Bake the courgette rolls in the oven for about 15 minutes at 190 ° -200 °.

At the end, Remove from the oven the baked zucchini rolls and serve immediately, still hot and stringy.

Vegetarian skewers

Skewers are always a welcome dish during summer barbecues, because they combine taste, lightness and speed of preparation. This time, instead of the usual meat-based ones, I propose a totally vegetarian version a little different from the usual, just as tasty and that will save you from having to think of an alternative for those who don't eat meat.

Carefully clean and wash 2 courgettes, 2 Tropea onions, half a red pepper, half a yellow pepper, half a green pepper, 10 cherry tomatoes and 20 small champignon mushrooms. Remove the stems of the mushrooms and cut the courgettes into slices and the onions and peppers into small pieces. Instead, leave the tomatoes whole.

In a bowl, prepare an emulsion of olive oil, vinegar, salt, pepper and thyme, to which you will add 2 peeled and crushed cloves of garlic. Put the vegetables and mushrooms in the bowl and cook them for 15-20 minutes, then keep the marinade.

Prepare the grill (or plate) and while it heats up, put the vegetables and mushrooms on the classic wooden skewers, alternating them. When the grill (or plate) is hot, cook your skewers by turning them on all sides and brushing them, during cooking, with the marinade you have kept aside. When they are well cooked and charred (depending on your taste), serve them immediately, along with a nice iced drink. Success guaranteed!

Of course mine is just a suggestion and you can compose your skewers by choosing the vegetables you prefer.

Gratinated courgette skewers

  • 2 courgettes
  • three packs of crackers
  • 2 cloves of garlic
  • a handful of pine nuts
  • parsley
  • half a tablespoon of turmeric, if you like or as a substitute for curry will be fine
  • extra virgin olive oil and salt to taste
  • 4 sticks for skewers

Wash and trim the courgettes, slice them finely with the help of a mandolin or, as I did, with a potato peeler.
advise: cut slices on one side and then on the other until it is good, the central part that remains you can cut into sticks and season it as you will season the skewers.
Prepare the panure by crumbling the crackers in their own bag, add the finely chopped parsley and garlic and the coarsely chopped pine nuts. Add a pinch of salt. Above sprinkle with turmeric.
Take a baking tray and grease it with a drizzle of oil. Start composing the skewers by rolling the courgette slices, salt the courgettes and cover with the panure. Top with a nice drizzle of oil on each skewer and in the oven for 20 minutes at 180 & # 176.
Have you ever eaten such delicious baked zucchini? :)
See you next vegan recipe!

First of all, slice the courgettes 4 mm thin, with the help of a mandolin or a sharp knife.

Then grill the courgettes on a hot plate about 1 minute on each side.

Finally, brush with a little extra virgin olive oil and then spread over the olive pate. Finally, roll up the zucchini to make rolls, without pressing too much and without letting the mixture come out from the sides:

Prepare your skewers by alternating a tomato (if you like, previously sprinkled with a pinch of salt), a morsel of mozzarella and a few basil leaves.
